I really can’t believe it is mid July!!! Where did the time go? At our house the tomatoes are ready to be picked daily. What to do, what to do with all of these tomatoes? Bruschetta of course! Bruschetta is easy to make and the flavor is so simple and refreshing.

Bruschetta with Baguette and Prosciutto:

4 Roma tomatoes chopped into small pieces. Cleaning out most seeds.

3 fresh garlic cloves chopped

1- 2.25 oz. can black olives chopped

½ cup ribbon cut fresh basil

½ cup olive oil

½ tsp. garlic salt

1 baguette sliced

1lb prosciutto or speck (smoked prosciutto)

In small bowl add chopped tomatoes, garlic, black olives, basil, olive oil and garlic salt mix together gently. Slice bread and brush with olive oil. Bake at 350 for 7-10 minutes. On a platter arrange bread slices and prosciutto. Put bruschetta in a small bowl and set on platter.
