Homemade Pimento Cheese

I have 12 people for vacation every year and I am responsible for the food. Everyone chips in and helps out but this is something I truly enjoy! I make a menu for the week including: breakfast , lunch, appetizers and dinner. I type it up and post it on the refrigerator. Our grandson Caleb can’t wait to see it posted! Therefore, I have to come up with some pretty cool stuff! 

One of the snacks I make is Pimento Cheese because it is one of my favorites! It is so versatile. Use it on bread alone, on a hamburger, on crackers or as a dip, you can even spread a little on that ham sandwich! I also like to make it as healthy as possible and with a little kick!


First I shred my own cheese. I think the kind in the bag is a little hard but hey, if that’s what it takes to get you to make your own homemade Pimento Cheese…..then buy the bag. It does make it very easy!

I also make large amounts so you can half this recipe. This recipe makes about 4 cups of Pimento Cheese.

Pimento Cheese 

6 cups shredded cheddar cheese (use a block of good, sharp cheddar

4 ounces softened cream cheese

1 cup mayonnaise

1 seven-ounce jar of diced pimentos ( I drained mine but not completely) 

1 teaspoon chili powder

1 teaspoon cayenne pepper

a few shakes of Franks Hot Sauce, to taste

salt and pepper, to taste

In a large bowl combine all the ingredients.   Mix well with a wooden spoon or rubber spatula. If you don’t like hot, don’t add chili powder or cayenne pepper.  Transfer to the refrigerator and allow the flavors to come together for at least one hour.


Very tasty!!! You will love it!

    1. So glad you like the recipe. It is a great meatless snack and I cut back a lot on the mayo. By not draining the pimentos all the way it makes the pimento cheese creamy so you don’t notice the lack of mayo. Thank you for commenting!
