I am at home with my grandson Cohen today who is sick. I have a few things to write about and I feel a little behind on things. I have a few projects I need to get done and food to make.
So I will start with the food. Last week when Grandma Dot came over I had no idea of what to make for dinner. I knew it needed to be “chicken something” but I had to go grocery shopping first. I bought boneless, skinless chicken breast and other staples for my kitchen. This is what I came up with:
A chicken breast with spinach leaves, blue cheese and cooked bacon rolled and dredged through egg and rolled in Italian bread crumbs. My updated style of Chicken Cordon Blue.
I took each chicken breast and butterflied it (cut it in half horizon-ally) to make it thinner. Then I placed it between two pieces of plastic and pounded it out a little. Layer the chicken flat and loaded it up, rolled it and closed it with toothpicks. I took 2 eggs and cracked then in a bowl and beat them up a little. Also took about a cup of Italian bread crumbs and placed them in a bowl. Dredged the chicken roll in egg and then in bread crumbs. I then baked for about 25-30 minutes at 350. It was wonderful!!!!! It was so good that I forgot to take a picture of the finished product. I made 8 pieces of chicken from 4 chicken breast. I also made a sauce for the top of the chicken from heavy whipping cream, blue cheese crumbles and lemon. It was delicious! I can’t believe I forgot the picture of the finished product.
I also tried my hand at a Pumpkin Chocolate Chip Cake. It was a friends birthday and that was her favorite sooooo……….
I thought it was good but I didn’t have anything to judge it against since I never had it before. Everyone here seemed to love it.

Not sure what I want to do with either. I thought about a headboard for the shutters and painting the dresser a blue cottage color. Any ideas or advise?
And as far as our Rock Candy Project:
It is a slow process!
