Healthy Eating

With the new year upon us everyone is thinking health. I have been thinking health since forever but doing more about it since September. This is due to a bucket list trip coming up in the new year. Whatever your thinking is coming from, it is a good thought. The next thing is to stay with it. They say we loose it quickly after the new year starts.

This is a great soup recipe that I got from my daughter. It is from a Paleo Cookbook that Santa brought her husband. She tried it and her entire family loved it! She has four kids and some of them hate veggies but they loved this soup! With that being said, I knew I needed to try it.

If you are trying to eat healthy, you might want to try it too.

Recipe:

2 TBS coconut oil

1 small onion

6 oz fresh shitake mushrooms sliced

2 garlic cloves, minced

2 teaspoons garlic, minced

2 teaspoons fresh ginger, minced

5 cups Beef Bone Broth

2 TBS coconut aminos

2 teaspoons fish sauce

1 teaspoon salt

2 medium zuchini

12 oz boneless sirloin steak, thinly sliced across the grain

Toppings:

Fresh Thai Basil (I used regular basil)

Fresh Cilantro

Sliced green onions

Sliced jalapeno

Lime wedges

 

Directions:

In  a large pot, heat coconut oil on medium. Add the onion and cook, stirring for about 2 minutes. Add the mushrooms and cook, stirring for about 3 minutes. Add garlic and ginger, Continue to stir for about 30 second more.Add broth, coconut aminos, fish sauce and salt, bring to a boil: reduce heat to a med-low simmer, uncovered for 4-5 minutes.

Meanwhile, use a spiral slicer or a julienne peeler to prepare zucchini noodles into lengthwise long strands.  Add the zucchini noodles to the soup and cook about 2 minutes. Add thinly sliced steak and cook another 30-60 seconds, Use ladle to serve in bowls and top with toppings.
