Yesterday was the Fresh Markets sale day for ground hamburger and boneless, skinless chicken breast so I decided to make a few freezer meals and thought I would share them with you. Today I am making two different meals with hamburger. I have 8 people at our house so I make big freezer meals. You can probably get many more.
Our meals are Gourmet Christmas Burgers (named because of color) and Italian Meatloaf. They have the same base but I add different things to them after they are seperated to give them each their own flavors.
Seperate the meat in halves. Giving each half a good size bowl.
When mixing all the ingredients together, I do use my hands because it makes it much easier to manage. It can get a little cold and you can used gloves to help with that. This recipe makes 12 good size burgers.
We have eight people that live here so I package them in packs of four so I can cook as little as four or as many as twelve. You can get more meals from this if you have less people. Pack your freezer bags accordingly. Make sure when you freeze the burgers that you lay them flat in the freezer.
I choose to put the date and name on my freezer foods so I can keep them organized.
When you grill your burgers, grill on med for 5 minutes per side. Depending on how you like them.
I have an aioli sauce I make for these burgers that is amazing:
Aioli Sauce:
¼ plain Greek yogurt
¼ cup Dukes Mayonnaise
4 garlic cloves minced
½ cup feta cheese
Salt and pepper to taste. Mix all ingredients in food processer. Chill for 1 hour before using. When cooked, put burgers on a bun and layer with red onion and aioli sauce. Yum!!!
Next Up:
Italian Meatloaf
Half of the hamburger mixture we already made.
2 TBS of Dijon Mustard
1 cup onions
1/4 cup ketchup
1/8 cup heavy whipping cream
Mix together with your hands. Form meatloaf and wrap up well. Again, you must lay it flat to freeze.
Remember to write on your ziplock bag before you put the sauce in it.
I made one meal from my meatloaf but if your family is smaller just split the meat and sauce up for 2-3 meals based on your family size.
Befor baking you meatloaf in glass dish or laying flat on a metal pan, add sauce to top. Bake at 350 for 35-45 minutes. Depending on the size you make.
Basic Meat:
6 pounds hamburger
4 eggs
1 cup bread crumbs
1 1/2 teaspoons garlic salt
2 TBS Italian seasoning
SEPERATE MEAT
Burgers:
add 1 box chopped fresh spinach or 1 box frozen, thawed and drained
1 1/2 cups feta cheese
1/2 cup roasted red pepper
1/2 cup heavy whipping cream
Meatloaf:
2 TBS Dijion Mustard
1 cup chopped onions
1/4 cup ketchup
1/8 cup heavy whipping cream
Sauce for Meatloaf:
1/2 cup ketchup
1/8 cup brown sugar
2 TBS whole grain mustard
