A Little Mexican Tonight?

A little Mexican tonight? This is another easy recipe with tons of flavor. When our kids were small I usually had to make dinner early in the day and warm it up later or cook it in the crock pot. Due to soccer practices, football, baseball…you name it, they played it. This is one of those meals! Reheats and still taste as fresh as if you had just made it. Sometimes better! All you need is :

4 cooked and chopped chicken breast or use 2 chicken breast and 5 boneless chicken thighs

1 box of Spanish style rice prepared as directed on box and add 1 can of petite diced tomatoes to it and cover and let sit 20 minutes

3 cups of cheese

1 cup salsa

6  larger floured tortillas

Then you just start layering : Spray the dish and lay 2 tortillas flat, then chicken, then rice, then cheese and salsa.

Do this step 3 times and then bake at 350* for 25 minutes covered. I served this with a salad and corn chips.

Top it off with salsa and plain Greek yogurt.

Our children have always loved this Mexican Lasagna and they ate it many times when they were little and they continue to make it in their own home now.
