Dinner Made Easy

I have had a few people ask me for some “easy”  dinner recipes. Since I love to cook all recipes are easy for me. I went all the way back to when I had to cook on a budget and when I had football and soccer practices all over town and needed a quick easy dinner. I made this recipe this week and shared it with our small group leaders on Tuesday. They loved it!

Very few ingredients but tons of flavor! You can use whatever type of sausages you would like. I used “hot” this time. Prepare the red beans and rice as directed on the box.

I did grill the sausages for 14 minutes turning once. After cooking I sliced the sausages into thin pieces.

Then mixed the already cooked red beans and rice with the sasuages…..

Added about 2 cups of cheese to the top………………….You could use less ….

Baked for 20 to 25 minutes at 350* and dinner was served!

I always use Chobani Greek yogurt instead of sour cream on top (because it is better for you) and served with Red Hot Blues chips and a salad. 

Chobani Plain Yogurt  has  100 calories for the entire 6 oz container, 0 fat, 18 grams of protein and I only use 2 tablespoons or so. Where as sour cream has 5 grams of fat, 60 calories and 1 gram of protein for 2 tablespoons. I think they taste the same. Give it a try!
