I wanted to give you an easy recipe today! Poppers, Linda style. These are always a big crowd pleaser when I make them for large gatherings like church functions, football, family time, even the fire house I cooked these for last week.
I must say when I made these for the fire station some of the “older” firemen were afraid that the Poppers would be too hot.( No names mentioned). I washed the jalapenos and then cut them in half. I took a spoon and scraped the seeds out and then washed them again.
I am ready to make the poppers.
Ingredients:
22 jalapenos cut in half
1 package cream cheese
1 teaspoon cumin
1 teaspoon coriander
1/2 teaspoon garlic salt
1/2 teaspoon red chill pepper (more if you like hot)
1/2 teaspoon cayenne pepper ( more if you like hot)
Mix cream cheese mixture together and spread inside the jalapenos.
Then I take a package of thin bacon and cut it into 3 sections. So I get 3 small pieces of bacon per piece. Place 1 piece of bacon over each popper and sprinkle with Mexican style cheese.
Bake at 350* for 18 to 20 minutes. Cover for the first 10 minutes and uncover the last 8 or 10 minutes.
Yummy! If you want your Poppers to be more spicy just leave a few seeds in them when you are cleaning them. Also, it is a good idea to use gloves to protect your hands!
