With all the health issues these days I thought I would try something different. I recently learned that my cousins husband has diabetes and high blood pressure. Most of you know my son and I have 1 kidney so our diet needs to be very healthy too. I thought I would try a few different “meatless” meals. Last night I tried a new “made up” recipe from black beans and sweet potatoes.
I made a bean salad and homemade guacamole. I also used Greek yogurt instead of sour cream. I thought it was a very tasty meal.
Recipe:
Black Bean Burgers:
1-15 ounce can of black beans, rinsed and drained
1 medium sweet potato cooked and mashed
¼ cup red onion small diced
¼ cup red pepper small diced
3 garlic cloves minced
¼ cup flour
¼ cup Progresso Italian bread crumbs
¼ teaspoon red chili pepper
¼ teaspoon red pepper flakes
½ teaspoon garlic salt
1/8 teaspoon pepper
Pre heat oven broiler. With a fork mash black beans and cooked sweet potato. Leaving some of the beans recognizable. In a large bowl, mix sweet potato black bean mixture with all other ingredients. Mix well. Spray a cookie sheet with PAM and make burgers by hand. Makes 5 to 6 burgers depending on size. Broil 5 to 6 inches from heat for about 10 to 12 minutes. Serve over a bed of mixed greens with homemade guacamole and Greek yogurt for sour cream.

This was fairly simple to make and tasted sooooooo fresh! I hope you enjoy this recipe and I will work at some other “meatless” meals.

The red pepper has 6g but we only used 1/4 cup and that is divided
by 5 or 6 burgers. The sweet potato has 13g and divided by 5 or 6..
White flour 3g, bread crumbs 2g. If you made the bean salad (which I can give you the recipe for) it has 38g but that is divided by 7 or 8. What is high for Bill? How many grams can he have per meal?
