Grill cheese has never been one of my favorites. I know everyone loves them with tomato soup on a cold winters day except me. I don’t think the common grill cheese has very much flavor and that forced me to come up with my own!
I started to think of foods and flavors that would taste great together. Then just started pulling things from the fridge. Get your taste buds ready to have a party!
I had wanted to try my hand at making butter and it was a blast. I made my very own pesto butter for my grill cheese.
Here is the recipe for the sandwich:
Best Grill Cheese Ever:
2 slices of good bread
3 slices of avocado
2 slices of bacon cooked (I cooked mine in the oven on a cookie sheet at 350* for 20 minutes covered)
A handful of fresh spinach
A few thin red onion slices
2 slices of Gouda cheese
Goat cheese crumbles
Pesto butter (Recipe follows)
Heat griddle to 250*. Spread pesto butter on each slice of bread and lay bread on griddle. Layer Gouda cheese, spinach leaves, avocado, red onion, bacon and goat cheese then another piece of Gouda. Put top piece of bread on and turn heat up to 300*. Cook until light brown on both sides and cheese is melted. So good!
And the pesto butter:
2 cups of heavy cream
½ package of Knorr Pesto
In food processor add 2 cups of heavy cream. Blend for 5 minutes. Add pesto and blend for another 5 minutes. Whala ……butter! Drain off excess liquid and form into ball or whatever shape you would like.
Now that is a grill cheese with homemade tomato bisque soup! I hope you enjoy this sandwich on a cold winters day!
